- 1/2 cup unsalted butter softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp almond extract optional
- Food coloring gel or liquid in rainbow colors
- 1/4 cup rainbow sprinkles for rolling

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, cream together the softened butter and sugar until light and fluffy (about 2-3 minutes).
Add the egg and vanilla extract (and almond extract, if using), and beat until fully incorporated.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Divide the dough into 4 portions. Add a few drops of different food coloring to each portion and mix until the dough is fully colored (you can create rainbow colors or just random fun colors!).
Roll each colored dough into small logs, about 1 inch long. Once you’ve made the logs, gently twist and roll them together into one large "poop" shape.
Roll each cookie in rainbow sprinkles to coat the outside, then place on the baking sheet. Flatten each cookie slightly with your fingers.
Bake for 10–12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
