Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract optional
  • Food coloring gel or liquid in rainbow colors
  • 1/4 cup rainbow sprinkles for rolling

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy (about 2-3 minutes).
  • Add the egg and vanilla extract (and almond extract, if using), and beat until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Divide the dough into 4 portions. Add a few drops of different food coloring to each portion and mix until the dough is fully colored (you can create rainbow colors or just random fun colors!).
  • Roll each colored dough into small logs, about 1 inch long. Once you’ve made the logs, gently twist and roll them together into one large "poop" shape.
  • Roll each cookie in rainbow sprinkles to coat the outside, then place on the baking sheet. Flatten each cookie slightly with your fingers.
  • Bake for 10–12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can use store-bought cookie dough and add the colors and sprinkles for a quicker version.
  • Gel food coloring works best to achieve vibrant colors without altering the dough’s consistency.
  • Customize your sprinkles: Add fun sprinkles on top for even more pizazz or shape them into unicorn horns or stars.
