  • 4 boneless skinless chicken breasts
  • 12 fresh asparagus spears trimmed
  • 4 slices mozzarella cheese or provolone
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Toothpicks or kitchen twine to secure

Instructions
 

  • Step 1: Prep the Chicken
  • Preheat oven to 400°F (200°C).
  • Using a sharp knife, cut a pocket into the side of each chicken breast—be careful not to slice all the way through.
  • Season the outside of each chicken breast with salt, pepper, garlic powder, paprika, and Italian seasoning.
  • Step 2: Stuff the Chicken
  • Place 3 asparagus spears and 1 slice of cheese inside each chicken breast pocket.
  • Secure the opening with toothpicks or kitchen twine.
  • Step 3: Sear and Bake
  • Heat olive oil in a large oven-safe skillet over medium-high heat.
  • Sear the chicken for 3–4 minutes per side, until golden brown.
  • Transfer the skillet to the preheated oven and bake for 15–18 minutes, or until the internal temperature reaches 165°F (74°C).

Notes

  • Use thin asparagus so it cooks through easily; if using thick ones, blanch them for 1–2 minutes first.
  • You can swap mozzarella with Swiss, provolone, or even cream cheese for variety.
  • Don’t have an oven-safe skillet? Sear in a pan and transfer to a baking dish.
