Step 1: Prep the Chicken
Preheat oven to 400°F (200°C).
Using a sharp knife, cut a pocket into the side of each chicken breast—be careful not to slice all the way through.
Season the outside of each chicken breast with salt, pepper, garlic powder, paprika, and Italian seasoning.
Step 2: Stuff the Chicken
Place 3 asparagus spears and 1 slice of cheese inside each chicken breast pocket.
Secure the opening with toothpicks or kitchen twine.
Step 3: Sear and Bake
Heat olive oil in a large oven-safe skillet over medium-high heat.
Sear the chicken for 3–4 minutes per side, until golden brown.
Transfer the skillet to the preheated oven and bake for 15–18 minutes, or until the internal temperature reaches 165°F (74°C).
-
Use thin asparagus so it cooks through easily; if using thick ones, blanch them for 1–2 minutes first.
-
You can swap mozzarella with Swiss, provolone, or even cream cheese for variety.
-
Don’t have an oven-safe skillet? Sear in a pan and transfer to a baking dish.
