  • Step 1: Prepare the Cod
  • Preheat oven to 400°F (200°C) and lightly grease a baking dish or line a baking sheet with parchment paper.
  • Pat the cod fillets dry with paper towels to remove excess moisture. Season with salt and pepper on both sides.
  • Step 2: Make the Crust
  • In a small bowl, combine Parmesan cheese, panko breadcrumbs, garlic powder, lemon zest, and chopped parsley.
  • Stir in the melted butter and olive oil until the mixture is well-coated and crumbly.
  • Step 3: Coat the Cod
  • Press the breadcrumb mixture onto the top of each cod fillet, ensuring it forms a thick, even crust.
  • Step 4: Bake the Cod
  • Place the coated cod fillets on the prepared baking dish and bake for 15–20 minutes, or until the fish is cooked through and the crust is golden and crispy. (The internal temperature should reach 145°F (63°C).)
  • Step 5: Serve
  • Serve the cod with lemon wedges for extra brightness and a side of your choice, such as roasted vegetables, rice, or a salad.

Notes

  • For a crunchier crust, you can broil the cod for the last 2–3 minutes of baking.
  • If you prefer a lighter crust, you can use whole wheat breadcrumbs or reduce the amount of butter.
