Step 1: Boil the Potatoes
Bring a large pot of salted water to a boil. Add baby potatoes and cook for about 15–20 minutes, or until fork tender.
Drain and let cool slightly.
Step 2: Smash and Bake
Preheat oven to 425°F (220°C).
Arrange potatoes on a baking sheet. Use the bottom of a glass or potato masher to gently smash them flat.
Drizzle with olive oil, season with salt, pepper, and garlic powder.
Bake for 15–20 minutes, or until edges are golden and crispy.
Sprinkle with cheese and return to the oven for 2–3 minutes until melted.
Brush with melted butter and sprinkle with chives.
Step 3: Cook the Steak Bites
While potatoes bake, pat steak dry and season with salt and pepper.
Heat olive oil in a skillet over high heat. Add steak bites in a single layer.
Sear for about 2 minutes per side, until browned but still tender.
Reduce heat to medium, add butter and garlic. Stir for 1–2 minutes until garlic is fragrant and steak is coated in garlic butter.
Step 4: Serve
Plate cheesy smashed potatoes with garlic butter steak bites on the side or right on top.
Garnish with fresh parsley or chives and serve immediately.
