These layered taco cupcakes are made with wonton wrappers, seasoned beef, cheese, and all your favorite taco toppings. Crunchy, cheesy, and totally crave-worthy!

- 1 lb ground beef
- 1 packet taco seasoning mix
- ½ cup water
- 24 wonton wrappers
- 1 cup refried beans optional
- 1½ cups shredded Mexican cheese blend
- ½ cup sour cream for topping
- ½ cup salsa or pico de gallo
- Chopped lettuce tomatoes, olives, jalapeños (optional toppings)
- Nonstick cooking spray
Preheat oven to 375°F (190°C) and spray a muffin tin with nonstick spray.
Cook the beef:
In a skillet over medium heat, cook the ground beef until browned.
Drain grease, add taco seasoning and water, and simmer until thickened (about 5 mins).
Assemble cupcakes:
Place one wonton wrapper in the bottom of each muffin cup.
Add 1 tsp refried beans (if using), a spoonful of taco meat, and a sprinkle of cheese.
Press down gently and layer a second wonton wrapper on top. Repeat layers of beans, meat, and cheese.
Bake:
Bake for 12–15 minutes, or until edges are golden and crispy.
Top and serve:
Remove from oven, let cool for 5 mins.
Add sour cream, salsa, lettuce, and any desired toppings.
