The Best Cheesy Taco Cupcakes – A Bite-Sized Tex-Mex Favorite

These layered taco cupcakes are made with wonton wrappers, seasoned beef, cheese, and all your favorite taco toppings. Crunchy, cheesy, and totally crave-worthy!

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • ½ cup water
  • 24 wonton wrappers
  • 1 cup refried beans optional
  • cups shredded Mexican cheese blend
  • ½ cup sour cream for topping
  • ½ cup salsa or pico de gallo
  • Chopped lettuce tomatoes, olives, jalapeños (optional toppings)
  • Nonstick cooking spray

Instructions
 

  • Preheat oven to 375°F (190°C) and spray a muffin tin with nonstick spray.
  • Cook the beef:
  • In a skillet over medium heat, cook the ground beef until browned.
  • Drain grease, add taco seasoning and water, and simmer until thickened (about 5 mins).
  • Assemble cupcakes:
  • Place one wonton wrapper in the bottom of each muffin cup.
  • Add 1 tsp refried beans (if using), a spoonful of taco meat, and a sprinkle of cheese.
  • Press down gently and layer a second wonton wrapper on top. Repeat layers of beans, meat, and cheese.
  • Bake:
  • Bake for 12–15 minutes, or until edges are golden and crispy.
  • Top and serve:
  • Remove from oven, let cool for 5 mins.
  • Add sour cream, salsa, lettuce, and any desired toppings.

Notes

  • Swap beef for ground turkey or black beans for a lighter version.
  • Add a dollop of guacamole or hot sauce for extra flavor.
  • Great for meal prep – just reheat in the oven or air fryer.
