Ingredients
  

  • 2 cups cooked chicken breast shredded or finely chopped
  • 1 large egg
  • ½ cup shredded cheddar cheese
  • ¼ cup mayonnaise
  • ¼ cup all-purpose flour
  • 2 tbsp ranch seasoning mix or 1 packet
  • 2 tbsp green onions finely chopped
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & black pepper to taste
  • Vegetable oil for frying

Instructions
 

  • Prepare the mixture:
  • In a large bowl, combine shredded chicken, egg, cheddar cheese, mayo, flour, ranch seasoning, green onions, garlic powder, onion powder, salt, and pepper. Mix until fully combined. The mixture should be thick and hold together when scooped.
  • Heat oil:
  • Add a few tablespoons of vegetable oil to a large skillet over medium heat.
  • Form and cook fritters:
  • Scoop 2–3 tbsp of mixture per fritter and gently flatten into patties. Fry 3–4 at a time for about 3–4 minutes per side, or until golden brown and cooked through.
  • Drain and serve:
  • Place on paper towels to drain excess oil. Serve hot with ranch dressing, buffalo sauce, or honey mustard.

Notes

  • For a low-carb version, substitute almond flour or crushed pork rinds.
  • You can use rotisserie chicken for extra flavor and convenience.
  • Air fryer option: Spray with oil and cook at 375°F for 10–12 minutes, flipping halfway.
