- 2 sirloin steaks or filet mignon about 6 oz each
- Salt and freshly ground black pepper to taste
- 2 tbsp olive oil
- 2 tbsp butter
- 1 small shallot finely chopped
- ½ cup mushrooms sliced (button or cremini)
- 1 tbsp Dijon mustard
- 2 tbsp Worcestershire sauce
- ¼ cup brandy or white wine as a substitute
- ½ cup heavy cream
- 1 tbsp fresh parsley chopped (for garnish)

Prepare the steaks:
Season both sides of the steaks generously with salt and pepper.
Cook the steaks:
Heat olive oil in a large skillet over medium-high heat. Once hot, add steaks and cook for 3-4 minutes per side for medium-rare (or longer for desired doneness). Remove steaks from the skillet and set aside to rest.
Make the sauce:
In the same skillet, add butter and let it melt. Add the chopped shallot and sliced mushrooms. Cook for about 3-4 minutes, stirring occasionally, until softened and browned.
Deglaze and simmer:
Add Dijon mustard and Worcestershire sauce to the skillet. Stir well, scraping up any brown bits from the bottom of the skillet. Carefully add the brandy and allow it to simmer for about 2 minutes until the alcohol evaporates.
Finish the sauce:
Pour in the heavy cream, stirring constantly. Let the sauce simmer for another 2-3 minutes until it thickens slightly. Taste and adjust seasoning with salt and pepper, if needed.
Serve:
Return the steaks to the skillet and spoon some of the sauce over the top. Garnish with chopped parsley and serve immediately.

For extra flavor, you can flambé the brandy. To do so, carefully ignite the brandy once added to the pan (make sure the flames are under control and keep a lid nearby for safety).
