A twist on traditional meatloaf, this version includes crispy bacon, cheddar cheese, and all the flavor of your favorite cheeseburger, baked into one satisfying dish.

Ingredients
  

  • lbs ground beef
  • ½ lb ground pork optional for added juiciness
  • 1 cup shredded cheddar cheese
  • ½ cup diced onion
  • 2 large eggs
  • ¾ cup breadcrumbs
  • ¼ cup ketchup plus extra for topping
  • 2 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 6 –8 slices bacon uncooked

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with foil or use a loaf pan.
  • Mix ingredients:
  • In a large bowl, combine ground beef, pork (if using), cheese, onion, eggs, breadcrumbs, ketchup, mustard, Worcestershire sauce, garlic powder, salt, and pepper. Mix until well combined but don’t overwork the meat.
  • Form the loaf:
  • Shape the meat mixture into a loaf on the prepared baking sheet or press it into a loaf pan.
  • Top with bacon:
  • Lay the uncooked bacon slices across the top, tucking the ends underneath the loaf.
  • Bake:
  • Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
  • Add ketchup glaze (optional):
  • In the last 10 minutes of baking, brush the top with additional ketchup for a glossy, flavorful finish.
  • Rest And Slice:
  • Let the meatloaf rest for 5–10 minutes before slicing. Serve warm.

Notes

  • Optional Add-Ins: Try adding chopped pickles or a drizzle of burger sauce to the meat mix for even more cheeseburger flavor.
  • Cheese Variations: Swap cheddar for pepper jack, Swiss, or American slices in the center.
  • Leftovers: Slice and reheat as sandwich fillings or crumble into a cheeseburger pasta bake!
