- 1½ lbs ground beef
- ½ lb ground pork optional for added juiciness
- 1 cup shredded cheddar cheese
- ½ cup diced onion
- 2 large eggs
- ¾ cup breadcrumbs
- ¼ cup ketchup plus extra for topping
- 2 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
- ½ tsp garlic powder
- Salt and pepper to taste
- 6 –8 slices bacon uncooked
Preheat oven to 375°F (190°C). Line a baking sheet with foil or use a loaf pan.
Mix ingredients:
In a large bowl, combine ground beef, pork (if using), cheese, onion, eggs, breadcrumbs, ketchup, mustard, Worcestershire sauce, garlic powder, salt, and pepper. Mix until well combined but don’t overwork the meat.
Form the loaf:
Shape the meat mixture into a loaf on the prepared baking sheet or press it into a loaf pan.
Top with bacon:
Lay the uncooked bacon slices across the top, tucking the ends underneath the loaf.
Bake:
Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
Add ketchup glaze (optional):
In the last 10 minutes of baking, brush the top with additional ketchup for a glossy, flavorful finish.
Rest And Slice:
Let the meatloaf rest for 5–10 minutes before slicing. Serve warm.
