Easy Chicken Parmesan Grilled Cheese – Perfectly Crisp and Saucy

Crispy chicken, melty mozzarella, tangy marinara, and golden-buttered bread make this grilled cheese sandwich a next-level lunch or dinner.

Ingredients
  

  • 4 slices sourdough or Italian bread
  • 2 tbsp butter softened
  • ½ cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup shredded parmesan cheese
  • 1 cup cooked breaded chicken chicken tenders, patties, or homemade cutlets
  • ½ tsp Italian seasoning
  • Optional: fresh basil or red pepper flakes

Instructions
 

  • Heat marinara sauce in a small saucepan or microwave until warm. Keep warm.
  • Butter one side of each slice of bread.
  • On the unbuttered side, layer:
  • A sprinkle of mozzarella
  • Sliced or chopped chicken
  • Warm marinara (a spoonful or two)
  • More mozzarella + a little parmesan
  • Dash of Italian seasoning
  • Top with second slice of bread, buttered side facing out.
  • Heat a non-stick skillet or griddle over medium heat. Cook sandwiches 3–4 minutes per side, pressing slightly, until golden brown and cheese is melted.
  • Serve with extra marinara for dipping and a sprinkle of basil or parmesan on top.

Notes

  • Use rotisserie chicken + breadcrumbs + egg to make quick homemade breaded chicken if needed.
  • Try it on garlic Texas toast for extra flair.
  • Add a slice of provolone or smoked mozzarella for added cheesy layers.
