Ingredients
  

  • For the Pizza:
  • 1 12- inch pizza crust store-bought, pre-baked or homemade
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked chicken breast diced or shredded
  • 2 tbsp olive oil divided
  • 1 clove garlic minced
  • ½ tsp Italian seasoning
  • Salt and pepper to taste
  • For the Bruschetta Topping:
  • 2 –3 Roma tomatoes diced
  • 2 tbsp fresh basil chopped
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional Garnish:
  • Extra basil leaves
  • Freshly grated Parmesan cheese
  • Balsamic glaze drizzle

Instructions
 

  • Preheat oven to 425°F (220°C). Place pizza crust on a baking sheet or pizza stone.
  • In a small bowl, mix olive oil, garlic, Italian seasoning, salt, and pepper. Brush over the pizza crust.
  • Sprinkle crust with mozzarella cheese, then top with chicken.
  • Bake for 12–15 minutes, or until cheese is melted and bubbly.
  • While baking, mix together all ingredients for the bruschetta topping in a bowl.
  • Remove pizza from oven, top with the bruschetta mixture. Garnish with basil, Parmesan, or a balsamic drizzle if desired.
  • Slice and serve immediately!

Notes

  • For extra flavor, marinate the chicken in balsamic vinegar and garlic before cooking.
  • You can swap the mozzarella for fresh mozzarella slices or add a bit of goat cheese for tang.
  • Great with a side salad or glass of chilled white wine!
