Golden and crispy breakfast potatoes seasoned to perfection and made in the air fryer! They’re quick, delicious, and use just a handful of pantry ingredients.

Ingredients
  

  • 1 ½ lbs gold potatoes or russet, diced into ½" cubes
  • 1 ½ tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika or regular
  • ½ tsp onion powder
  • ½ tsp dried thyme or rosemary
  • Salt and black pepper to taste
  • Optional: chopped parsley or chives for garnish

Instructions
 

  • Preheat & Prep
  • Preheat your air fryer to 400°F (200°C) for 3–5 minutes.
  • In a large bowl, toss diced potatoes with olive oil and seasonings until evenly coated.
  • Air Fry
  • Place potatoes in a single layer in the air fryer basket (cook in batches if needed).
  • Air fry for 18–20 minutes, shaking the basket halfway through. Cook longer if needed for extra crispiness.
  • Serve
  • Remove, season with extra salt if needed, and sprinkle with chopped herbs.
  • Serve hot alongside eggs, avocado toast, or breakfast burritos.

Notes

  • Spice it up: Add cayenne or red pepper flakes for heat.
  • Make it cheesy: Toss with shredded cheddar during the last 2 minutes.
  • Storage: Store leftovers in the fridge for up to 3 days. Reheat in air fryer to bring back crispiness.
