Golden and crispy breakfast potatoes seasoned to perfection and made in the air fryer! They’re quick, delicious, and use just a handful of pantry ingredients.

1 ½ lbs gold potatoes or russet, diced into ½" cubes 1 ½ tbsp olive oil 1 tsp garlic powder 1 tsp smoked paprika or regular ½ tsp onion powder ½ tsp dried thyme or rosemary Salt and black pepper to taste Optional: chopped parsley or chives for garnish
Preheat & Prep
Preheat your air fryer to 400°F (200°C) for 3–5 minutes.
In a large bowl, toss diced potatoes with olive oil and seasonings until evenly coated.
Air Fry
Place potatoes in a single layer in the air fryer basket (cook in batches if needed).
Air fry for 18–20 minutes, shaking the basket halfway through. Cook longer if needed for extra crispiness.
Serve
Remove, season with extra salt if needed, and sprinkle with chopped herbs.
Serve hot alongside eggs, avocado toast, or breakfast burritos.
Spice it up : Add cayenne or red pepper flakes for heat.
Make it cheesy : Toss with shredded cheddar during the last 2 minutes.
