Preheat Oven:
Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Brown the Sausage:
In a skillet over medium heat, add olive oil and brown the sausage slices until they’re slightly crisped. Remove and set aside.
Make Cheese Sauce:
In the same skillet, melt butter.
Whisk in flour to form a roux; cook 1–2 minutes.
Slowly add milk, whisking constantly until smooth and thickened (about 5 minutes).
Stir in cheese, sour cream (if using), salt, pepper, garlic powder, and paprika. Mix until smooth.
Assemble:
In the prepared baking dish, layer diced raw potatoes and browned sausage.
Pour cheese sauce evenly over the top.
Gently stir or toss to coat everything.
Bake:
Cover with foil and bake for 30 minutes. Remove foil, sprinkle with extra cheese, and bake an additional 15–20 minutes, or until potatoes are fork-tender and the top is bubbly and golden.
