  • 14 oz smoked sausage sliced into rounds
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 3 carrots peeled and sliced
  • 2 celery stalks sliced
  • 2 medium potatoes peeled and diced
  • 1 zucchini chopped
  • 1 15 oz can diced tomatoes
  • cups green beans fresh or frozen
  • 6 cups chicken or vegetable broth
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

  • Sauté sausage: In a large pot, heat olive oil over medium heat. Add sliced sausage and cook until lightly browned, about 4–5 minutes. Remove and set aside.
  • Sauté vegetables: In the same pot, sauté onion, garlic, carrots, and celery for 3–4 minutes until slightly tender.
  • Simmer soup: Add potatoes, zucchini, green beans, diced tomatoes (with juice), broth, Italian seasoning, salt, and pepper. Stir well and bring to a boil.
  • Cook: Reduce heat and simmer for 15–20 minutes or until the vegetables are tender.
  • Add sausage: Return the browned sausage to the pot and simmer for an additional 5 minutes.
  • Serve: Garnish with fresh parsley and enjoy warm with crusty bread.

Notes

  • You can substitute smoked sausage with turkey or chicken sausage for a lighter option.
  • Add spinach or kale during the last few minutes of cooking for extra greens.
