  • 4 salmon fillets 6 oz each
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • For the Glaze:
  • 1 cup fresh orange juice from about 2 oranges
  • 2 tbsp honey or maple syrup
  • 1 tsp orange zest
  • 1 tbsp soy sauce or coconut aminos
  • 2 tsp fresh rosemary finely chopped (or 1 tsp dried)
  • 2 cloves garlic minced
  • 1 tsp cornstarch mixed with 1 tbsp water optional, for thickening

  • Make the glaze:
  • In a small saucepan over medium heat, combine orange juice, honey, zest, soy sauce, rosemary, and garlic. Simmer until reduced by about half (8–10 minutes). For a thicker glaze, stir in the cornstarch slurry and simmer another 1–2 minutes.
  • Prepare the salmon:
  • Pat salmon dry and season with salt and pepper.
  • Sear the salmon:
  • Heat olive oil in a large skillet over medium heat. Place salmon skin-side up and sear for 3–4 minutes until golden. Flip and cook another 3–4 minutes, or until cooked through.
  • Glaze and serve:
  • Brush the salmon with the orange rosemary glaze. Serve extra glaze on the side with steamed vegetables, rice, or quinoa.

Notes

  • Use blood oranges for a more dramatic presentation and deeper flavor.
  • Can be baked instead: Bake salmon at 400°F for 12–15 minutes, then brush with glaze.
  • Great with roasted Brussels sprouts, mashed sweet potatoes, or a couscous salad.
