- Salt and pepper to taste
- 1 tbsp olive oil
- For the Glaze:
- 1 cup fresh orange juice from about 2 oranges
- 2 tbsp honey or maple syrup
- 1 tsp orange zest
- 1 tbsp soy sauce or coconut aminos
- 2 tsp fresh rosemary finely chopped (or 1 tsp dried)
- 2 cloves garlic minced
- 1 tsp cornstarch mixed with 1 tbsp water optional, for thickening

Make the glaze:
In a small saucepan over medium heat, combine orange juice, honey, zest, soy sauce, rosemary, and garlic. Simmer until reduced by about half (8–10 minutes). For a thicker glaze, stir in the cornstarch slurry and simmer another 1–2 minutes.
Prepare the salmon:
Pat salmon dry and season with salt and pepper.
Sear the salmon:
Heat olive oil in a large skillet over medium heat. Place salmon skin-side up and sear for 3–4 minutes until golden. Flip and cook another 3–4 minutes, or until cooked through.
Glaze and serve:
Brush the salmon with the orange rosemary glaze. Serve extra glaze on the side with steamed vegetables, rice, or quinoa.
