  • 12 oz spaghetti
  • 6 strips of bacon chopped
  • 3 cups baby spinach
  • 1 pint cherry tomatoes halved
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh basil optional, for garnish

Instructions
 

  • Cook the Pasta:
  • Boil spaghetti in salted water until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  • Cook the Bacon:
  • In a large skillet over medium heat, cook chopped bacon until crispy. Remove with a slotted spoon and set aside. Drain excess grease, leaving about 1 tablespoon in the pan.
  • Sauté Garlic and Tomatoes:
  • In the same skillet, add olive oil and garlic. Sauté for 30 seconds, then add cherry tomatoes and red pepper flakes. Cook until tomatoes soften (about 5 minutes).
  • Add Spinach and Pasta:
  • Stir in the spinach and cook until wilted. Add cooked spaghetti, reserved pasta water, and cooked bacon. Toss everything together until well combined.
  • Season and Serve:
  • Season with salt and pepper. Top with Parmesan and fresh basil if desired. Serve warm.

  • Swap spaghetti for whole wheat or gluten-free pasta if needed.
