- 2¼ tsp active dry yeast 1 packet
- ¼ cup honey
- 2 tablespoons melted butter plus more for brushing
- 1 large egg
- 2½ cups whole wheat flour
- 1 cup all-purpose flour plus more as needed
- 1 teaspoon salt

Activate Yeast:
In a large bowl, combine warm milk and honey. Sprinkle yeast on top and let sit for 5–10 minutes, until foamy.
Mix Dough:
Add melted butter, egg, salt, whole wheat flour, and 1 cup of all-purpose flour. Stir until a soft dough forms. Add extra flour, 1 tablespoon at a time, if too sticky.
Knead Dough:
Turn dough onto a floured surface and knead for 6–8 minutes until smooth and elastic.
First Rise:
Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
Shape Rolls:
Punch down the dough. Divide into 12 equal pieces and roll into balls. Place in a greased 9×13" pan or baking sheet.
Second Rise:
Cover and let rolls rise again for 20–30 minutes while you preheat oven to 375°F (190°C).
Bake:
Bake rolls for 14–16 minutes or until golden brown on top.
Finish:
Brush warm rolls with melted butter. Serve warm or let cool completely.
