- 2 tablespoons olive oil
- 1 small onion finely chopped
- 3 garlic cloves minced
- 1 14.5 oz can diced tomatoes (with juices)
- 1/4 teaspoon red pepper flakes optional
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley plus more for garnish
- 1/4 cup chopped fresh dill optional
- 1/2 cup crumbled feta cheese
- Juice of 1/2 lemon

Sauté Aromatics:
Heat olive oil in a large skillet over medium heat. Add onion and cook for 3–4 minutes until soft. Add garlic and cook for another 30 seconds.
Make the Tomato Sauce:
Add diced tomatoes (with juices), red pepper flakes, oregano, salt, and pepper. Simmer uncovered for 10 minutes until slightly thickened.
Add Shrimp:
Nestle the shrimp into the sauce in a single layer. Cover and cook for 3–5 minutes until shrimp turn pink and opaque.
Finish with Feta & Herbs:
Remove from heat. Stir in lemon juice, parsley, and dill (if using). Sprinkle crumbled feta over the top.
Serve:
Garnish with extra herbs and serve with crusty bread, rice, or orzo.
