Ingredients
  

  • For the Chicken Marinade:
  • 1 lb 450g boneless skinless chicken breast or thighs, cut into chunks
  • 1/2 cup plain yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 cloves garlic minced
  • 1 teaspoon grated fresh ginger
  • For the Masala Sauce:
  • 2 tablespoons oil or butter
  • 1 large onion finely chopped
  • 3 garlic cloves minced
  • 1 tablespoon grated ginger
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper optional
  • 1 15 oz can tomato sauce or purée
  • 1 cup heavy cream or coconut milk for dairy-free
  • Salt to taste
  • Fresh cilantro for garnish

  • Marinate the Chicken:
  • In a bowl, mix yogurt, lemon juice, spices, garlic, and ginger. Add chicken and coat well. Cover and marinate for at least 1 hour or overnight.
  • Cook the Chicken:
  • Grill or pan-sear chicken over medium-high heat until cooked through and slightly charred. Set aside.
  • Make the Sauce:
  • In a large skillet, heat oil or butter. Sauté onions until soft (about 5 minutes). Add garlic, ginger, and spices. Cook for 1–2 minutes until fragrant.
  • Add Tomatoes And Cream:
  • Stir in tomato sauce and simmer for 10 minutes. Lower heat and stir in cream. Simmer another 5 minutes.
  • Combine And Simmer:
  • Add cooked chicken to the sauce. Simmer for 10 minutes to let flavors blend. Season with salt to taste.
  • Serve:
  • Garnish with fresh cilantro. Serve with basmati rice or warm naan bread.

Notes

  • Want it spicier? Add extra cayenne or fresh chilies.
  • Coconut milk can replace cream for a dairy-free version.
  • Marinate longer for deeper flavor overnight is best.
