- For the Chicken Marinade:
- 1 lb 450g boneless skinless chicken breast or thighs, cut into chunks
- 1/2 cup plain yogurt
- 1 tablespoon lemon juice
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 teaspoon paprika
- 1 teaspoon salt
- 2 cloves garlic minced
- 1 teaspoon grated fresh ginger
- For the Masala Sauce:
- 2 tablespoons oil or butter
- 1 large onion finely chopped
- 3 garlic cloves minced
- 1 tablespoon grated ginger
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper optional
- 1 15 oz can tomato sauce or purée
- 1 cup heavy cream or coconut milk for dairy-free
- Salt to taste
- Fresh cilantro for garnish

Marinate the Chicken:
In a bowl, mix yogurt, lemon juice, spices, garlic, and ginger. Add chicken and coat well. Cover and marinate for at least 1 hour or overnight.
Cook the Chicken:
Grill or pan-sear chicken over medium-high heat until cooked through and slightly charred. Set aside.
Make the Sauce:
In a large skillet, heat oil or butter. Sauté onions until soft (about 5 minutes). Add garlic, ginger, and spices. Cook for 1–2 minutes until fragrant.
Add Tomatoes And Cream:
Stir in tomato sauce and simmer for 10 minutes. Lower heat and stir in cream. Simmer another 5 minutes.
Combine And Simmer:
Add cooked chicken to the sauce. Simmer for 10 minutes to let flavors blend. Season with salt to taste.
Serve:
Garnish with fresh cilantro. Serve with basmati rice or warm naan bread.
