Instructions
 

  • In a bowl, whisk the eggs with milk (if using), salt, and pepper.
  • Heat olive oil or butter in a non-stick skillet over medium heat.
  • Add chopped spinach and sauté for 1–2 minutes until wilted.
  • Pour in the eggs, tilting the pan to spread them evenly.
  • As the eggs begin to set, sprinkle feta cheese on top.
  • Cook for another 2–3 minutes, then fold the omelette in half.
  • Slide onto a plate and serve hot!

  • Add chopped tomatoes or onions for more flavor.
  • Use baby spinach for the best texture.
