  • 1 lb 450g lean ground turkey
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1/4 cup soy sauce low sodium
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha optional
  • 1/2 cup shredded carrots
  • 1/2 cup chopped water chestnuts optional
  • 2 green onions thinly sliced
  • 1 head butter lettuce or romaine leaves washed & separated
  • Sesame seeds & lime wedges for garnish

Instructions
 

  • Cook the turkey: In a large skillet, heat sesame oil over medium heat. Add garlic and ginger and sauté for 30 seconds.
  • Add ground turkey. Cook until fully browned, breaking it up with a spatula.
  • Stir in soy sauce, hoisin sauce, rice vinegar, and sriracha. Simmer for 2–3 minutes.
  • Add shredded carrots, water chestnuts, and green onions. Stir to combine.
  • Spoon mixture into individual lettuce leaves.
  • Garnish with sesame seeds and serve with lime wedges.

Notes

  • Use iceberg or butter lettuce for easier wrapping.
  • Add cooked rice or quinoa for a heartier version.
  • Great for make-ahead lunches just store filling separately.
