Instructions
 

  • Preheat oven to 225°F (110°C). Line a baking sheet with parchment paper.
  • Slice zucchini into very thin rounds (use a mandoline for best results).
  • Pat slices dry with paper towels to remove moisture.
  • Toss zucchini in a bowl with olive oil, salt, and any optional seasonings.
  • Arrange slices in a single layer on the baking sheet without overlapping.
  • Bake for 1.5 to 2 hours, flipping halfway, until golden and crisp.
  • Cool before serving they’ll crisp up more as they cool.

Notes

  • For extra crispiness, salt the zucchini slices and let sit for 10 minutes before baking, then blot with paper towels.
  • Best eaten the same day if storing, keep in an airtight container for up to 1 day.
