  • 1 tbsp olive oil
  • 1 lb 450g smoked sausage or kielbasa, sliced
  • 1 small head green cabbage chopped (about 6 cups)
  • 1 small yellow onion thinly sliced
  • 2 cloves garlic minced
  • Salt & black pepper to taste
  • 1 tsp paprika optional
  • 1 tbsp apple cider vinegar optional, for a tangy touch
  • Red pepper flakes optional, for heat

Instructions
 

  • Brown the sausage
  • Heat olive oil in a large skillet over medium heat. Add sausage slices and cook 5–7 minutes until browned. Remove and set aside.
  • Sauté vegetables
  • In the same skillet, add onion and garlic. Cook for 2 minutes until fragrant. Add chopped cabbage, season with salt, pepper, and paprika. Cook for 8–10 minutes, stirring occasionally, until cabbage is soft and slightly caramelized.
  • Combine
  • Return sausage to the skillet. Stir to combine. Add apple cider vinegar (if using) and red pepper flakes to taste.
  • Serve warm
  • Dish it out hot enjoy on its own or over mashed potatoes, rice, or cauliflower rice.

  • Swap smoked sausage for turkey sausage or plant-based sausage for a lighter option.
