- 1 lb 450g ground beef or ground turkey
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt & pepper to taste
- 1 cup shredded cheddar or Mexican blend cheese
- 1/4 cup diced red onion
- 1/4 cup sliced black olives optional
- 1/4 cup sliced jalapeños optional
- Fresh cilantro chopped, for garnish
- Sour cream guacamole, or salsa, for serving

Prep Peppers
Preheat oven to 375°F (190°C).
Slice bell peppers into "chip"-sized pieces and arrange on a parchment-lined baking sheet.
Cook Meat
In a skillet over medium heat, add olive oil and brown the ground beef or turkey.
Season with chili powder, cumin, garlic powder, salt, and pepper. Cook until no longer pink.
Assemble Nachos
Spoon cooked meat evenly over bell pepper slices.
Top with shredded cheese, red onion, olives, and jalapeños.
Bake
Bake for 8–10 minutes, or until cheese is melted and bubbly.
