  • 3 –4 bell peppers any color, cut into wide strips or wedges
  • 1 lb 450g ground beef or ground turkey
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup diced red onion
  • 1/4 cup sliced black olives optional
  • 1/4 cup sliced jalapeños optional
  • Fresh cilantro chopped, for garnish
  • Sour cream guacamole, or salsa, for serving

Instructions
 

  • Prep Peppers
  • Preheat oven to 375°F (190°C).
  • Slice bell peppers into "chip"-sized pieces and arrange on a parchment-lined baking sheet.
  • Cook Meat
  • In a skillet over medium heat, add olive oil and brown the ground beef or turkey.
  • Season with chili powder, cumin, garlic powder, salt, and pepper. Cook until no longer pink.
  • Assemble Nachos
  • Spoon cooked meat evenly over bell pepper slices.
  • Top with shredded cheese, red onion, olives, and jalapeños.
  • Bake
  • Bake for 8–10 minutes, or until cheese is melted and bubbly.
  • Serve
  • Garnish with chopped cilantro. Serve with sour cream, guacamole, or salsa on the side.
