- ½ cup sliced almonds
- ½ cup chopped walnuts
- ¼ cup pumpkin seeds pepitas
- 2 tbsp chia seeds
- 2 tbsp sunflower seeds
- ¼ cup shredded coconut optional
- ½ tsp cinnamon
- ¼ tsp salt
- ⅓ cup honey or pure maple syrup
- 2 tbsp coconut oil or olive oil
- 1 tsp vanilla extract

Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large bowl, combine oats, nuts, seeds, coconut, cinnamon, and salt.
In a small saucepan, warm honey and coconut oil over low heat until melted. Remove from heat, stir in vanilla.
Pour liquid over dry ingredients and mix until evenly coated.
Spread mixture in an even layer on the baking sheet.
Bake for 22–25 minutes, stirring once halfway, until golden and toasted.
Let cool completely it crisps as it cools.
Store in an airtight jar at room temperature for up to 2 weeks.
