  • ½ cup chopped walnuts
  • ¼ cup pumpkin seeds pepitas
  • 2 tbsp chia seeds
  • 2 tbsp sunflower seeds
  • ¼ cup shredded coconut optional
  • ½ tsp cinnamon
  • ¼ tsp salt
  • cup honey or pure maple syrup
  • 2 tbsp coconut oil or olive oil
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine oats, nuts, seeds, coconut, cinnamon, and salt.
  • In a small saucepan, warm honey and coconut oil over low heat until melted. Remove from heat, stir in vanilla.
  • Pour liquid over dry ingredients and mix until evenly coated.
  • Spread mixture in an even layer on the baking sheet.
  • Bake for 22–25 minutes, stirring once halfway, until golden and toasted.
  • Let cool completely it crisps as it cools.
  • Store in an airtight jar at room temperature for up to 2 weeks.
